without an apron / healthy breakfast tacos

While Sara opted to shorten her list of New Year’s resolutions this year, I eagerly picked up a pen and paper and wrote 10 of them down. My life in 2012 mostly consisted of late nights at the office and late nights at the bar. Don’t get me wrong, it was a fantastic year, but this combination resulted in 10 pounds, excessive eating out and little sleep. I’ve spent the past three weeks with a cold that turned into a sinus infection and decided it was time to make some conscious healthy living decisions. I’m excited to share all those cauliflower pizzalentil soup and gluten free dishes I’ve been pinning over the past year, but first, an easy to assemble healthy breakfast with a little avocado thrown in to make it feel less like winter.

Healthy Breakfast Tacos
{enough for one hopeful 2013 eater}

2 corn tortillas
2 egg whites {with or without a splash of skim milk}
1/2 can Cuban spiced black beans {or regular if you don’t go to Trader Joe’s}
Light Mexican shredded cheese
1/2 an avocado cut into bite sized pieces {tip: keep the pit in the other half to keep it from going brown}
Fresh ground salt and pepper
5-8 leaves of fresh cilantro washed and torn

Scramble your two egg whites {with or without a splash of skim milk} while heating up 1/4 to a 1/2 a can of black beans in the microwave. Once your eggs are cooked and your beans are heated, place two corn tortillas between slightly damp paper towels and microwave for 20 seconds or until warm. Spoon your desired amount of beans into the warm tortillas, then add the scrambled egg whites. Next, sprinkle with cheese, diced avocado, fresh ground salt and pepper, salsa and torn cilantro.

Take a bite and don’t feel guilty. It’s a new year.
